ARCADIA BLUFFS ENVOLVE WINE DINNER

Arcadia Bluffs Golf Club (along Lake Michigan between Franfort and Manistee) is ranked among the top golf courses in America by every major golf publication. Since it opened in 1999, it has been ranked consistently in the top five golf courses in Michigan and certainly it is the most scenic with its stunning views of Lake Michigan.
Equally impressive are the culinary offerings at Arcadia Bluffs, and even if you’re not a golfer the dining room offers impressive views and a menu to match it.
A big reason for their culinary success is by having three executive chefs. The team Ron Fiel (a seven year veteran of Arcadia), Matt Miilu and Bret Phillips (both arrived recently from Stella in Traverse City) has resulted in a creative and quality menu. They will showcase their talents Monday June 25 by hosting a winemakers dinner featuring “Bachelor” Ben Flajnik and Mike Benziger of Sonoma County based Envolve Winery.
“We are fortunate to have all three of these chefs here,” said Rick Dewling, Food and Beverage Director. “They have created a stunning pairing at each course that will impress the winemakers and attendees.”
The trio developed the menu after sampling each of the wines and then did a taste test to see if what they envisioned would work. Here is what they came up with: The first course will feature artisan cheeses, compressed fruits and passed toast smears paired with 2010 Epilogue Chardonnay. The next course is Atlantic Scallop, cold pressed olive oil, rocket arugula, gala apple, creme friache and parsnip foam paired with 2011 Envolve Sauvignon Blanc. The Intermezzo will feature a strawberry cucumber sorbet. The third course is sous vide Mangalista bacon-wrapped duck leg, baked duck liver ravioli, black berry vinaigrette and crisp green beans paired with 2010 Epilouge “Red.”
The beef course is sous vide smoked Rice Farms beef tri-tip, grilled red onion, grilled portabella and rosemary veal stock paired with 2008 Envolve Cabernet Sauvignon. To finish off the evening: strawberries, whipped triple cream, dulce’ de leche and toasted pound cake paired with Envolve Rose.
